Potato Varieties
If there is one vegetable most of us would consider an all time favorite it would have to be the lowly potato.
Rusty and Sue Nuffer have been growing fresh produce organically for over 25 years and this season alone they are offering 27 varieties of potatoes.
Rusty Nuffer, Organic Farmer, Jerusalem, AR: My fascination with potatoes I guess is that they are just such a staple. The average working person who wants to get something out of their garden, it is a staple crop. It is hard to grow the cereal grains but yet you can always get a crop of potatoes and if you take a little bit of care they will make something. My preferences in tastes of potatoes, I do like to have some flavor there. Some whites and some reds are a little bland for me. The Fingerlings in general have a good earthy taste. The Rose Finn Apple is very, very earthy - almost roasted tasting even when it is steamed. We often get a response when people look at our blue potatoes. The variety is called All Blue and it is really pretty purple colored. They think “we throw potatoes away when they look like that” because they are very dark colored, but they are a great baker. They are a great all around potato really.
With so many varieties available to us it would be easy to become a potato connoisseur, so encourage farmers in your area to grow a wide range of diverse produce and support them by shopping at your local farmer’s market.
